・Mihorido’s Uiro was founded in 1927 as a representative confection of Yamaguchi.
・In 1927 the founder was trained at “Fukudaya,” known for its Yamaguchi-style Uiro, and was entrusted with the recipe before establishing Mihorido. In 1946, after Fukudaya closed, Mihorido inherited the traditional methods of making Yamaguchi Uiro. Since its founding, Mihorido has exclusively manufactured and sold “Yamaguchi Uiro,” maintaining its pure identity as a dedicated Uiro confectioner.

・Unlike Uiro from other regions, Yamaguchi Uiro is made from authentic bracken starch (referred to as “sen”) sourced from bracken roots and includes adzuki bean paste. Mihorido insists on high-quality ingredients, using premium domestic bracken starch to produce authentic Yamaguchi Uiro.
・Bracken is a familiar wild vegetable in Japan. While commonly used in dishes like stews, only the root is used in Yamaguchi Uiro.

How to Enjoy Vacuum- Uiro Even Better
1. Place the vacuum-packed Uiro in boiling water without removing the package.
2. Once it returns to a boil, turn off the heat, let it cool completely, then enjoy.

Cook adzuki beans to make smooth red bean paste.
Boil granulated sugar and brown sugar to make a syrup.
Knead the red bean paste with syrup to create the Uiro filling.
Mix bracken starch and wheat flour.
Pour the Uiro mixture into molds and steam in a seiro
(traditional steamer).
